Description

Delicious and low-carb crepe rolls filled with your choice of fillings, perfect for breakfast or dessert.


Ingredients

  • 4 large eggs
  • 1 cup almond flour
  • 1 cup unsweetened almond milk
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt


Instructions

  1. In a mixing bowl, whisk together eggs, almond flour, almond milk, melted butter, vanilla extract, and salt until smooth.
  2. Heat a non-stick skillet over medium heat and lightly grease it.
  3. Pour a small amount of batter into the skillet, tilting it to spread evenly.
  4. Cook for about 2-3 minutes until the edges lift and the bottom is golden brown, then flip and cook for another 1-2 minutes.
  5. Remove and repeat with the remaining batter.
  6. Fill each crepe with your favorite fillings and roll them up.

Notes

  • For a sweet version, add low-carb sweetener to the batter.
