- 4 large eggs
- 1 cup almond flour
- 1 cup unsweetened almond milk
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
Instructions
- In a mixing bowl, whisk together eggs, almond flour, almond milk, melted butter, vanilla extract, and salt until smooth.
- Heat a non-stick skillet over medium heat and lightly grease it.
- Pour a small amount of batter into the skillet, tilting it to spread evenly.
- Cook for about 2-3 minutes until the edges lift and the bottom is golden brown, then flip and cook for another 1-2 minutes.
- Remove and repeat with the remaining batter.
- Fill each crepe with your favorite fillings and roll them up.
Notes
- For a sweet version, add low-carb sweetener to the batter.
- These crepes can be filled with cream cheese, fruits, or savory ingredients.
