Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper (optional)
- 1 can (28 ounces) crushed tomatoes
- 4 large eggs
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add chopped onion and cook until soft.
- Stir in minced garlic, cumin, paprika, and cayenne pepper. Cook until fragrant.
- Pour in crushed tomatoes and season with salt and pepper. Let simmer for 10 minutes.
- Create small wells in the tomato mixture and crack an egg into each well.
- Cover the skillet and cook until the eggs are set to your liking.
- Garnish with fresh parsley before serving.
