Description

This refreshing Kiwi Curd Meringue Tart is a delicious blend of tart and sweet flavors, perfect for any occasion.


Ingredients

  • 1 pre-baked tart shell
  • 3 ripe kiwis, peeled and chopped
  • 1 cup granulated sugar
  • 3 large eggs, separated
  • 1/2 cup unsalted butter, cubed
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 4 large egg whites
  • 1/4 teaspoon cream of tartar
  • 1/2 cup granulated sugar (for meringue)


Instructions

  1. In a saucepan, combine the chopped kiwis, sugar, and egg yolks. Cook over medium heat, stirring constantly until the mixture thickens.
  2. Add butter and cornstarch, stirring until smooth. Remove from heat and stir in vanilla and salt.
  3. Pour the kiwi mixture into the pre-baked tart shell and let it cool.
  4. In a mixing bowl, beat the egg whites with cream of tartar until soft peaks form. Gradually add the sugar and beat until stiff peaks form.
  5. Spoon the meringue over the cooled kiwi curd and spread to the edges.
  6. Bake in a preheated oven at 350°F (175°C) for 10-12 minutes until the meringue is golden.
  7. Allow to cool before serving.

Notes

  • Keep the tart refrigerated if not serving immediately.
  • To enhance the flavor, consider adding a splash of lime juice to the kiwi mixture.
