This refreshing Kiwi Curd Meringue Tart is a delicious blend of tart and sweet flavors, perfect for any occasion.

- 1 pre-baked tart shell
- 3 ripe kiwis, peeled and chopped
- 1 cup granulated sugar
- 3 large eggs, separated
- 1/2 cup unsalted butter, cubed
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 4 large egg whites
- 1/4 teaspoon cream of tartar
- 1/2 cup granulated sugar (for meringue)
Instructions
- In a saucepan, combine the chopped kiwis, sugar, and egg yolks. Cook over medium heat, stirring constantly until the mixture thickens.
- Add butter and cornstarch, stirring until smooth. Remove from heat and stir in vanilla and salt.
- Pour the kiwi mixture into the pre-baked tart shell and let it cool.
- In a mixing bowl, beat the egg whites with cream of tartar until soft peaks form. Gradually add the sugar and beat until stiff peaks form.
- Spoon the meringue over the cooled kiwi curd and spread to the edges.
- Bake in a preheated oven at 350°F (175°C) for 10-12 minutes until the meringue is golden.
- Allow to cool before serving.
Notes
- Keep the tart refrigerated if not serving immediately.
- To enhance the flavor, consider adding a splash of lime juice to the kiwi mixture.
