Ingredients

- 2 pounds lamb, cubed
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 2 tablespoons curry powder
- 1 cup plain yogurt
- 1 can coconut milk
- 2 tablespoons vegetable oil
- 1 teaspoon salt
- 1 cup water
- 1/4 cup fresh cilantro, chopped
Instructions
- Heat the oil in a large pot over medium heat.
- Add the onions, garlic, and ginger, sauté until the onions are translucent.
- Add the lamb and cook until browned on all sides.
- Stir in the curry powder and cook for another minute.
- Add the yogurt, coconut milk, salt, and water; bring to a simmer.
- Cover and cook for 1.5 to 2 hours, or until the lamb is tender.
- Stir in the cilantro before serving.
Notes
- This dish can be made ahead of time and tastes even better the next day.
- Serve with rice or naan for a complete meal.
