Description

Deliciously tangy lemon bars infused with the aromatic flavor of lavender.


Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup granulated sugar
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon dried culinary lavender
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons lemon zest


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, cream together butter and powdered sugar.
  3. Mix in flour and salt until well combined.
  4. Press the dough into the bottom of a greased baking dish.
  5. Bake for 15 minutes or until lightly golden.
  6. In another bowl, whisk together eggs, granulated sugar, lemon juice, lavender, baking powder, and lemon zest.
  7. Pour the mixture over the baked crust.
  8. Bake for an additional 20–25 minutes until set.
  9. Let it cool, then dust with powdered sugar before serving.

Notes

  • For a stronger lavender flavor, let the dried lavender steep in the lemon juice for a few hours before using.
  • Store in the refrigerator for up to a week.
  • Serve chilled or at room temperature.
