Description

A delightful dessert featuring a flaky crust filled with sweet blueberries and a hint of lemon zest.


Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 2-3 tablespoons ice water
  • 2 cups fresh blueberries
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • 1 tablespoon cornstarch
  • 1 egg, beaten (for egg wash)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine flour, sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Add ice water, one tablespoon at a time, mixing until a dough forms. Shape into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
  4. In another bowl, combine blueberries, lemon juice, lemon zest, and cornstarch. Set aside.
  5. Roll out the dough on a floured surface into a 12-inch circle. Transfer to a baking sheet lined with parchment paper.
  6. Fill the center with the blueberry mixture, leaving a 2-inch border. Fold the edges of the dough over the filling, pleating as necessary.
  7. Brush the dough with the beaten egg.
  8. Bake for 35-40 minutes, until the crust is golden brown and the filling is bubbling.
  9. Let cool for 10 minutes before slicing and serving.

Notes

  • Serve with a scoop of vanilla ice cream for an extra treat!
  • This galette can be made with frozen blueberries if fresh are not available.
