Ingredients

- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 2-3 tablespoons ice water
- 2 cups fresh blueberries
- 1 tablespoon lemon juice
- 1 tablespoon lemon zest
- 1 tablespoon cornstarch
- 1 egg, beaten (for egg wash)
Instructions
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, combine flour, sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
- Add ice water, one tablespoon at a time, mixing until a dough forms. Shape into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
- In another bowl, combine blueberries, lemon juice, lemon zest, and cornstarch. Set aside.
- Roll out the dough on a floured surface into a 12-inch circle. Transfer to a baking sheet lined with parchment paper.
- Fill the center with the blueberry mixture, leaving a 2-inch border. Fold the edges of the dough over the filling, pleating as necessary.
- Brush the dough with the beaten egg.
- Bake for 35-40 minutes, until the crust is golden brown and the filling is bubbling.
- Let cool for 10 minutes before slicing and serving.
Notes
- Serve with a scoop of vanilla ice cream for an extra treat!
- This galette can be made with frozen blueberries if fresh are not available.
