Description
A tangy and spicy jam that pairs beautifully with various dishes.
Ingredients

- 4 cups lemons, juiced and zested
- 2 cups fresh ginger, minced
- 2 cups red chili peppers, chopped
- 6 cups granulated sugar
- 1 cup water
- 1 packet fruit pectin
Instructions
- In a large pot, combine the lemon juice, zest, ginger, chili peppers, and water. Bring to a boil over medium heat.
- Add the sugar and stir until dissolved. Bring the mixture back to a boil.
- Add the pectin and boil for an additional 5 minutes.
- Pour into sterilized jars and seal.
- Allow to cool and store in the refrigerator.
Notes
- For a spicier jam, leave the seeds in some of the chili peppers.
- This jam can be served with grilled meats or as a spread on bread.
