- 1 lemon, zested and juiced

Instructions
- Preheat the oven to 450°F (230°C).
- Spatchcock the chicken by removing the backbone and flattening it.
- In a bowl, mix olive oil, lemon juice, lemon zest, garlic, rosemary, thyme, salt, and pepper.
- Rub the marinade all over the chicken, ensuring it’s well-coated.
- Place the chicken on a baking sheet and roast for 45-50 minutes, until the internal temperature reaches 165°F (75°C).
- Let it rest for 10 minutes before slicing and serving.
