Ingredients

  • 2 tablespoons olive oil
  • 1 lemon, zested and juiced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped

  • ½ teaspoon black pepper


Instructions

  1. Preheat the oven to 450°F (230°C).
  2. Spatchcock the chicken by removing the backbone and flattening it.
  3. In a bowl, mix olive oil, lemon juice, lemon zest, garlic, rosemary, thyme, salt, and pepper.
  4. Rub the marinade all over the chicken, ensuring it’s well-coated.
  5. Place the chicken on a baking sheet and roast for 45-50 minutes, until the internal temperature reaches 165°F (75°C).
  6. Let it rest for 10 minutes before slicing and serving.
