Ingredients

- 1 cup lentils
- 1 can coconut milk
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 inch ginger, grated
- 2 cups vegetable broth
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1 chili, chopped (optional)
- 2 tbsp oil
- 1/2 cup cilantro, chopped
Instructions
- Heat oil in a pot over medium heat. Add onion, garlic, and ginger; sauté until fragrant.
- Add lentils, vegetable broth, coconut milk, and spices. Stir well.
- Bring to a boil, then reduce heat and simmer until lentils are tender, about 25-30 minutes.
- Stir in cilantro before serving.
Notes
- Serve with rice or naan for a complete meal.
- Can adjust spice level by adding more or less chili.
