Ingredients

- 1 cup dried lentils
- 2 cups spinach, chopped
- 1 teaspoon salt
- 1 teaspoon cumin powder
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 2 tablespoons olive oil
- 1 cup water
- 1/2 teaspoon baking powder
- 1/4 cup flour (optional, for dusting)
Instructions
- Rinse the lentils and cook them in a pot with water until tender.
- In a separate bowl, mix the cooked lentils with chopped spinach, salt, cumin, paprika, garlic powder, and olive oil.
- Blend the mixture until smooth.
- Add baking powder and blend briefly.
- Heat a non-stick skillet over medium heat and pour a ladle of the mixture into the skillet.
- Cook on each side for about 2-3 minutes until golden brown.
- Repeat with the remaining mixture.
- Serve warm.
Notes
- For added flavor, you can include herbs like cilantro or parsley.
- Adjust the spices according to your taste.
- These flatbreads can be frozen and reheated later.
