Description

A rich and indulgent pasta dish featuring tender lobster and a creamy champagne sauce.


Ingredients

  • 8 ounces linguine
  • 2 tablespoons olive oil
  • 1 shallot, minced
  • 2 cloves garlic, minced
  • 1 cup champagne
  • 1 cup heavy cream
  • 1 pound lobster meat, cooked and chopped
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste


Instructions

  1. Cook linguine according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced shallot and garlic, sautéing until soft.
  3. Pour in champagne and bring to a simmer. Let cook for about 5 minutes.
  4. Stir in heavy cream and cook until the sauce thickens slightly.
  5. Add lobster meat and cooked linguine to the skillet, tossing to combine. Season with salt and pepper.
  6. Garnish with fresh parsley before serving.
