- 2 pounds chicken thighs
- 1 can coconut milk
- 2 tablespoons curry powder
- 1 tablespoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 2 tablespoons olive oil
- 1 lime
- 2 green onions
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine coconut milk, curry powder, chili powder, garlic powder, onion powder, and salt.
- Add chicken thighs to the mixture and marinate for at least 30 minutes.
- Heat olive oil in a skillet over medium heat and sear chicken thighs for about 5 minutes on each side.
- Transfer chicken to a baking dish and pour the remaining coconut sauce over the top.
- Bake in the preheated oven for 25-30 minutes, until chicken is cooked through.
- Serve with lime juice and chopped green onions on top.
Notes
- For extra heat, add sliced jalapeños to the marinade.
- Serve over cauliflower rice for a low-carb side.
