This Low-Carb Spicy Brazilian Coconut Chicken is a flavorful dish that’s perfect for a healthy meal.


Ingredients

  • 2 pounds chicken thighs
  • 1 can coconut milk
  • 2 tablespoons curry powder
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 1 lime
  • 2 green onions


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine coconut milk, curry powder, chili powder, garlic powder, onion powder, and salt.
  3. Add chicken thighs to the mixture and marinate for at least 30 minutes.
  4. Heat olive oil in a skillet over medium heat and sear chicken thighs for about 5 minutes on each side.
  5. Transfer chicken to a baking dish and pour the remaining coconut sauce over the top.
  6. Bake in the preheated oven for 25-30 minutes, until chicken is cooked through.
  7. Serve with lime juice and chopped green onions on top.

Notes

  • For extra heat, add sliced jalapeños to the marinade.
  • Serve over cauliflower rice for a low-carb side.
