Ingredients

- 1 cup roasted sweet potatoes

Instructions
- In a large bowl, combine the quinoa, roasted sweet potatoes, steamed kale, and chickpeas.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Drizzle the dressing over the grain mixture and toss to combine.
- Top with crumbled feta cheese before serving.
