Description

Ingredients

  • 1 cup rolled oats
  • 2 cups coconut milk
  • 1 ripe mango, diced
  • 2 tablespoons honey or maple syrup
  • 1/4 cup shredded coconut
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt


Instructions

  1. In a saucepan, combine the rolled oats, coconut milk, honey or maple syrup, vanilla extract, and salt. Bring to a boil over medium heat.
  2. Reduce heat to low and simmer for 5-7 minutes, stirring occasionally, until the oats are cooked and creamy.
  3. Remove from heat and stir in the diced mango and shredded coconut.
