Delicious and festive mini Christmas cakes that are perfect for holiday gifting.
Ingredients

- 300g mixed dried fruit
- 100g glacé cherries
- 100g almonds
- 100g unsalted butter
- 100g soft brown sugar
- 2 eggs
- 200g all-purpose flour
- 1 tsp baking powder
- 1 tsp mixed spice powder
- 75ml milk
- 100g marzipan
- 100g icing sugar
- 100g fondant icing
- 50g edible glitter
Instructions
- Preheat the oven to 160°C (320°F).
- In a pan, melt the butter and sugar together, then add the dried fruits and nuts.
- Allow to cool and then stir in the eggs, flour, baking powder, spice, and milk.
- Pour the mixture into lined mini cake tins.
- Bake for about 30 minutes or until a skewer comes out clean.
- Let the cakes cool completely before decorating.
- Cover with marzipan and icing, and finish with edible glitter.
Notes
- These cakes can be made in advance and stored for several weeks.
- Wrap them well to keep them fresh.
- Decorate as desired with festive decorations.
