Description

Delicious and festive mini Christmas cakes that are perfect for holiday gifting.


Ingredients

Scale
  • 300g mixed dried fruit
  • 100g glacĂ© cherries
  • 100g almonds
  • 100g unsalted butter
  • 100g soft brown sugar
  • 2 eggs
  • 200g all-purpose flour
  • 1 tsp baking powder
  • 1 tsp mixed spice powder
  • 75ml milk
  • 100g marzipan
  • 100g icing sugar
  • 100g fondant icing
  • 50g edible glitter


Instructions

  1. Preheat the oven to 160°C (320°F).
  2. In a pan, melt the butter and sugar together, then add the dried fruits and nuts.
  3. Allow to cool and then stir in the eggs, flour, baking powder, spice, and milk.
  4. Pour the mixture into lined mini cake tins.
  5. Bake for about 30 minutes or until a skewer comes out clean.
  6. Let the cakes cool completely before decorating.
  7. Cover with marzipan and icing, and finish with edible glitter.

Notes

  • These cakes can be made in advance and stored for several weeks.
  • Wrap them well to keep them fresh.
  • Decorate as desired with festive decorations.
