Description

Deliciously moist muffins with the unique flavor of matcha combined with banana and coconut.


Ingredients

  • 1 cup mashed ripe bananas
  • 1/3 cup melted coconut oil
  • 1/2 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 tablespoon matcha green tea powder
  • 1/4 teaspoon salt
  • 1/2 cup shredded coconut


Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, mix the mashed bananas, melted coconut oil, sugar, eggs, and vanilla extract until well combined.
  3. In another bowl, whisk together the flour, baking powder, baking soda, matcha powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. Fold in the shredded coconut.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Let muffins cool before serving.

Notes

  • For a sweeter muffin, add more sugar as desired.
  • These muffins freeze well, so make a batch ahead of time.
