- 1 cup mashed ripe bananas
- 1/3 cup melted coconut oil
- 1/2 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 tablespoon matcha green tea powder
- 1/4 teaspoon salt
- 1/2 cup shredded coconut
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
- In a large bowl, mix the mashed bananas, melted coconut oil, sugar, eggs, and vanilla extract until well combined.
- In another bowl, whisk together the flour, baking powder, baking soda, matcha powder, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Fold in the shredded coconut.
- Divide the batter evenly among the muffin cups.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Let muffins cool before serving.
Notes
- For a sweeter muffin, add more sugar as desired.
- These muffins freeze well, so make a batch ahead of time.
