- 1 cup almond butter
- 1/4 cup coconut oil
- 1/4 cup honey or maple syrup
- 1/4 cup matcha powder
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/3 cup shredded coconut (optional)
Instructions
- In a mixing bowl, combine almond butter, coconut oil, honey or maple syrup, matcha powder, vanilla extract, and salt. Mix until smooth.
- Line a muffin tin with cupcake liners and pour the mixture into each liner, filling them about 2/3 full.
- If using, sprinkle shredded coconut on top of each cup.
- Place the muffin tin in the fridge for about 1-2 hours until set.
- Once set, remove from the muffin tin and enjoy!
Notes
- Store in the refrigerator for up to a week.
- For a vegan option, use maple syrup instead of honey.
- Feel free to add nuts or dried fruits for extra texture.
