Delightful Mauritian Pineapple & Chili Salsa Fish Tacos that combine fresh flavors and spices for a delicious meal.

- 2 cups fresh pineapple, diced
- 1 small red onion, finely chopped
- 1 jalapeño pepper, seeded and minced
- 1/4 cup fresh cilantro, chopped
- 1 tablespoon lime juice
- 1 teaspoon honey
- Salt and pepper, to taste
- 1 pound white fish fillets (such as tilapia or cod)
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 tablespoon olive oil
- 8 small corn tortillas
- Lime wedges, for serving
Instructions
- In a medium bowl, combine the diced pineapple, red onion, jalapeño, cilantro, lime juice, honey, salt, and pepper. Mix well and set aside to let the flavors meld for about 15 minutes.
- While the salsa is resting, season the fish fillets with cumin, paprika, salt, and pepper.
- Heat the olive oil in a large skillet over medium-high heat. Add the seasoned fish fillets and cook for about 3-4 minutes per side, or until the fish is cooked through and flakes easily with a fork.
- While the fish is cooking, warm the corn tortillas in a separate skillet or microwave until pliable.
- To assemble the tacos, place a piece of fish on each tortilla, top with the pineapple and chili salsa, and garnish with additional cilantro if desired. Serve with lime wedges on the side.
Notes
- For added crunch, top the tacos with shredded cabbage or sliced radishes.
- Substitute the fish with grilled shrimp or tofu for a different protein option.
