Description

Delightful Mauritian Pineapple & Chili Salsa Fish Tacos that combine fresh flavors and spices for a delicious meal.


Ingredients

  • 2 cups fresh pineapple, diced
  • 1 small red onion, finely chopped
  • 1 jalapeño pepper, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon lime juice
  • 1 teaspoon honey
  • Salt and pepper, to taste
  • 1 pound white fish fillets (such as tilapia or cod)
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 tablespoon olive oil
  • 8 small corn tortillas
  • Lime wedges, for serving


Instructions

  1. In a medium bowl, combine the diced pineapple, red onion, jalapeño, cilantro, lime juice, honey, salt, and pepper. Mix well and set aside to let the flavors meld for about 15 minutes.
  2. While the salsa is resting, season the fish fillets with cumin, paprika, salt, and pepper.
  3. Heat the olive oil in a large skillet over medium-high heat. Add the seasoned fish fillets and cook for about 3-4 minutes per side, or until the fish is cooked through and flakes easily with a fork.
  4. While the fish is cooking, warm the corn tortillas in a separate skillet or microwave until pliable.
  5. To assemble the tacos, place a piece of fish on each tortilla, top with the pineapple and chili salsa, and garnish with additional cilantro if desired. Serve with lime wedges on the side.

Notes

  • For added crunch, top the tacos with shredded cabbage or sliced radishes.
