Instructions
- Heat the olive oil in a skillet over medium heat.
- Add the chopped onion and bell pepper, cooking until softened.
- Stir in the diced tomatoes and red pepper flakes, cooking until the tomatoes break down.
- Make small wells in the mixture and crack the eggs into the wells.
- Cover the skillet and cook until the eggs are set to your liking.
- Season with salt and pepper, then serve hot.
