Description

Mini Chicken Quesadillas are a delicious and easy-to-make snack or meal perfect for any occasion.


Ingredients

  • 1 cup cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup bell pepper, diced
  • 1/4 cup onion, diced
  • 4 small flour tortillas
  • 1 tablespoon olive oil
  • 1 teaspoon taco seasoning


Instructions

  1. In a bowl, combine the shredded chicken, cheese, bell pepper, onion, and taco seasoning.
  2. Heat olive oil in a skillet over medium heat.
  3. Place a tortilla in the skillet, add a portion of the chicken mixture, and top with another tortilla.
  4. Cook for 2-3 minutes on each side until golden brown and cheese is melted.
  5. Remove from skillet and repeat with remaining tortillas and filling.
  6. Cut into wedges and serve warm.
