Mini Chicken Quesadillas are a delicious and easy-to-make snack or meal perfect for any occasion.
Ingredients

- 1 cup cooked chicken, shredded
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup bell pepper, diced
- 1/4 cup onion, diced
- 4 small flour tortillas
- 1 tablespoon olive oil
- 1 teaspoon taco seasoning
Instructions
- In a bowl, combine the shredded chicken, cheese, bell pepper, onion, and taco seasoning.
- Heat olive oil in a skillet over medium heat.
- Place a tortilla in the skillet, add a portion of the chicken mixture, and top with another tortilla.
- Cook for 2-3 minutes on each side until golden brown and cheese is melted.
- Remove from skillet and repeat with remaining tortillas and filling.
- Cut into wedges and serve warm.

- Feel free to add additional vegetables or spices to customize.
- Serve with salsa or guacamole for dipping.
