- 8 ounces elbow macaroni
- 1 cup diced celery
- 1 cup diced bell pepper
- 1/2 cup diced red onion
- 1 cup mayonnaise
- 2 tablespoons lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup chopped hard-boiled eggs
- 1/4 cup fresh parsley, chopped
Instructions
- Cook the elbow macaroni according to package instructions; drain and rinse under cold water.
- In a large bowl, combine the macaroni, celery, bell pepper, red onion, mayonnaise, lemon juice, salt, black pepper, hard-boiled eggs, and parsley.
- Toss until well combined and adjust seasoning to taste.
- Spoon the pasta salad into small cups, resembling nests.
- Chill in the refrigerator for at least 30 minutes before serving.
