Delicious miniature almond tarts that are perfect for any occasion.
Ingredients

- 1 cup almond flour
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, softened
- 1 egg yolk
- 1/2 teaspoon almond extract
- 1/4 teaspoon salt
- 1/2 cup apricot jam
- 1/3 cup sliced almonds
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine almond flour, sugar, butter, egg yolk, almond extract, and salt. Mix until a dough forms.
- Roll out the dough and cut into circles to fit mini muffin tins.
- Press the dough into the tins and fill each with a spoonful of apricot jam.
- Top with sliced almonds.
- Bake for 15-20 minutes or until golden brown.
- Allow to cool before serving.
Notes
- Make sure not to overbake the tarts to keep them moist.
- These tarts can be stored in an airtight container for several days.
