- 4 cups chicken broth
- 2 tablespoons miso paste
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 8 ounces ramen noodles
- 4 ounces pancetta, diced
- 2 egg yolks
- 1/2 cup grated Parmesan cheese
- 2 green onions, sliced
- 1 nori sheet, cut into strips
Instructions
- In a pot, combine chicken broth, miso paste, soy sauce, and sesame oil. Bring to a simmer.
- Cook ramen noodles according to package instructions; drain and set aside.
- In a skillet, cook pancetta until crisp; remove from heat.
- In a bowl, whisk together egg yolks and Parmesan cheese.
- Slowly stir the hot broth into the egg mixture to temper it, then return to the pot.
- Add the noodles and pancetta to the pot; stir to combine.
- Serve topped with green onions and nori strips.
Notes
- For a vegetarian version, use vegetable broth and omit pancetta.
- Adjust miso paste quantity for desired saltiness.
