Description

A delicious fusion of traditional ramen and carbonara, featuring rich flavors and creamy texture.


Ingredients

  • 4 cups chicken broth
  • 2 tablespoons miso paste
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 8 ounces ramen noodles
  • 4 ounces pancetta, diced
  • 2 egg yolks
  • 1/2 cup grated Parmesan cheese
  • 2 green onions, sliced
  • 1 nori sheet, cut into strips


Instructions

  1. In a pot, combine chicken broth, miso paste, soy sauce, and sesame oil. Bring to a simmer.
  2. Cook ramen noodles according to package instructions; drain and set aside.
  3. In a skillet, cook pancetta until crisp; remove from heat.
  4. In a bowl, whisk together egg yolks and Parmesan cheese.
  5. Slowly stir the hot broth into the egg mixture to temper it, then return to the pot.
  6. Add the noodles and pancetta to the pot; stir to combine.
  7. Serve topped with green onions and nori strips.

Notes

  • For a vegetarian version, use vegetable broth and omit pancetta.
  • Adjust miso paste quantity for desired saltiness.
