Description

A delectable venison loin coated with a moss-like crust, perfect for a sophisticated dinner.


Ingredients

  • 2 cups breadcrumbs
  • 1 cup chopped herbs (parsley, thyme, and rosemary)
  • 1/4 cup Dijon mustard
  • 2 tablespoons olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix breadcrumbs with chopped herbs, salt, and pepper.
  3. Coat the venison loin with Dijon mustard, then roll in the herb-breadcrumb mixture.
  4. Heat olive oil in a skillet and sear all sides of the loin until golden brown.
  5. Transfer the seared loin to the oven and roast for 25-30 minutes, or until the internal temperature reaches 130°F (54°C).
  6. Let rest for 10 minutes before slicing.
