Description
Muriwo Unedovi is a nutritious dish made with leafy greens in a creamy peanut butter sauce, perfect as a side or main course.

- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 teaspoon freshly grated ginger
- 1 bunch of kale or collard greens, roughly chopped (about 8 cups)
- 1 cup vegetable broth or water
- 1/2 cup smooth peanut butter
- 2 tablespoons tamari or soy sauce
- 1 tablespoon fresh lemon juice
- Salt and black pepper to taste
Instructions
- Warm the olive oil in a large frying pan over medium heat.
- Add the diced onion and sauté until soft and translucent, about 5 minutes.
- Incorporate the minced garlic and grated ginger, stirring for 1-2 minutes until aromatic.
- Add the chopped kale or collard greens, tossing with the onion mixture, and cook for about 5 minutes until they start to soften.
- Pour in the vegetable broth or water, cover the pan, and let it simmer for about 10 minutes until the greens are tender.
- In a bowl, combine the peanut butter, tamari or soy sauce, and lemon juice, mixing until creamy.
- Once the greens are ready, stir in the peanut sauce and heat through for another 5 minutes while stirring frequently.
- Season with salt and black pepper to taste before serving.
