Description

Muriwo Unedovi is a nutritious dish made with leafy greens in a creamy peanut butter sauce, perfect as a side or main course.


Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon freshly grated ginger
  • 1 bunch of kale or collard greens, roughly chopped (about 8 cups)
  • 1 cup vegetable broth or water
  • 1/2 cup smooth peanut butter
  • 2 tablespoons tamari or soy sauce
  • 1 tablespoon fresh lemon juice
  • Salt and black pepper to taste


Instructions

  1. Warm the olive oil in a large frying pan over medium heat.
  2. Add the diced onion and sauté until soft and translucent, about 5 minutes.
  3. Incorporate the minced garlic and grated ginger, stirring for 1-2 minutes until aromatic.
  4. Add the chopped kale or collard greens, tossing with the onion mixture, and cook for about 5 minutes until they start to soften.
  5. Pour in the vegetable broth or water, cover the pan, and let it simmer for about 10 minutes until the greens are tender.
  6. In a bowl, combine the peanut butter, tamari or soy sauce, and lemon juice, mixing until creamy.
  7. Once the greens are ready, stir in the peanut sauce and heat through for another 5 minutes while stirring frequently.
  8. Season with salt and black pepper to taste before serving.
