- 2 pounds mussels, cleaned
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 2 cups chicken broth
- 1/4 cup fresh parsley, chopped
- 1/2 teaspoon red pepper flakes
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat.
- Add the minced garlic and sauté for about 1 minute until fragrant.
- Pour in the chicken broth and stir in the red pepper flakes.
- Bring to a simmer, then add the cleaned mussels to the pot.
- Cover the pot and cook for about 5-7 minutes, until the mussels open up.
- Remove from heat, stir in the fresh parsley, and season with salt and pepper to taste.
- Serve immediately with crusty bread to soak up the broth.
