- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 cup green beans, chopped
- 1 teaspoon dried thyme
- 1 teaspoon bay leaf
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup magic mushrooms, sliced
- 1 tablespoon fresh parsley, chopped
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the onion and garlic and sauté until fragrant.
- Add carrots and celery; cook until softened.
- Pour in vegetable broth and bring to a simmer.
- Add tomatoes, green beans, thyme, bay leaf, salt, and pepper.
- Stir in the magic mushrooms and parsley.
- Simmer for 30 minutes, stirring occasionally.
- Remove bay leaf before serving.
