Description

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 cup green beans, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon bay leaf
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup magic mushrooms, sliced
  • 1 tablespoon fresh parsley, chopped


Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion and garlic and sauté until fragrant.
  3. Add carrots and celery; cook until softened.
  4. Pour in vegetable broth and bring to a simmer.
  5. Add tomatoes, green beans, thyme, bay leaf, salt, and pepper.
  6. Stir in the magic mushrooms and parsley.
  7. Simmer for 30 minutes, stirring occasionally.
  8. Remove bay leaf before serving.
