Description

Delicious and easy no bake coconut cookies that are perfect for any occasion.


Ingredients

  • 2 cups shredded coconut
  • 1 cup oats
  • 1/2 cup peanut butter
  • 1/2 cup honey
  • 1 teaspoon vanilla extract
  • 1/4 cup cocoa powder
  • 1/4 cup chopped nuts (optional)


Instructions

  1. In a bowl, mix together shredded coconut, oats, cocoa powder, and nuts if using.
  2. In a separate bowl, combine peanut butter, honey, and vanilla extract until smooth.
  3. Mix the dry ingredients with the wet ingredients until fully combined.
  4. Drop spoonfuls of the mixture onto a baking sheet lined with parchment paper.
  5. Refrigerate for at least 30 minutes or until set.
