Instructions
- In a bowl, mix together shredded coconut, oats, cocoa powder, and nuts if using.
- In a separate bowl, combine peanut butter, honey, and vanilla extract until smooth.
- Mix the dry ingredients with the wet ingredients until fully combined.
- Drop spoonfuls of the mixture onto a baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes or until set.
