- 1 ½ cups almond flour
- ¼ cup coconut oil, melted
- ¼ cup maple syrup
- 1 ½ cups cashews, soaked
- ¼ cup coconut milk
- ¼ cup lemon juice
- 1 teaspoon vanilla extract
- ¼ cup agave syrup
- 1 cup fresh berries (for topping)
Instructions
- In a bowl, combine almond flour, melted coconut oil, and maple syrup. Press into a lined baking dish to form the crust.
- In a blender, combine soaked cashews, coconut milk, lemon juice, vanilla extract, and agave syrup. Blend until smooth and creamy.
- Pour the cheesecake mixture over the crust and smooth the top.
- Refrigerate for at least 4 hours or until set.
- Top with fresh berries before serving.
Notes
- Make sure to soak the cashews for at least 4 hours for a creamy texture.
- Feel free to use any berries for topping, or serve with a berry sauce.
