Description

Delicious and creamy no bake cheesecake bars inspired by the flavors of Dubai. Perfect for a vegan dessert option.


Ingredients

  • 1 ½ cups almond flour
  • ¼ cup coconut oil, melted
  • ¼ cup maple syrup
  • 1 ½ cups cashews, soaked
  • ¼ cup coconut milk
  • ¼ cup lemon juice
  • 1 teaspoon vanilla extract
  • ¼ cup agave syrup
  • 1 cup fresh berries (for topping)


Instructions

  1. In a bowl, combine almond flour, melted coconut oil, and maple syrup. Press into a lined baking dish to form the crust.
  2. In a blender, combine soaked cashews, coconut milk, lemon juice, vanilla extract, and agave syrup. Blend until smooth and creamy.
  3. Pour the cheesecake mixture over the crust and smooth the top.
  4. Refrigerate for at least 4 hours or until set.
  5. Top with fresh berries before serving.

Notes

  • Make sure to soak the cashews for at least 4 hours for a creamy texture.
