Description

A moist and flavorful cake made with polenta and fresh orange zest.


Ingredients

  • 1 cup sugar
  • 1 cup orange juice
  • 1/2 cup olive oil
  • 3 eggs
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon orange zest


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together polenta, sugar, orange juice, and olive oil.
  3. Add eggs one at a time, whisking well after each addition.
  4. Stir in baking powder, salt, and orange zest.
  5. Pour the batter into a greased cake pan.
  6. Bake for 30-40 minutes or until a toothpick comes out clean.
  7. Allow to cool before serving.
