Ingredients

- 1 cup polenta
- 1 cup sugar
- 1 cup orange juice
- 1/2 cup olive oil
- 3 eggs
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon orange zest
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together polenta, sugar, orange juice, and olive oil.
- Add eggs one at a time, whisking well after each addition.
- Stir in baking powder, salt, and orange zest.
- Pour the batter into a greased cake pan.
- Bake for 30-40 minutes or until a toothpick comes out clean.
- Allow to cool before serving.
