Delicious Oreo macarones filled with a rich vanilla cream filling, perfect for any occasion.


Ingredients

  • 1 cup almond flour
  • 1 cup powdered sugar
  • 1/2 cup egg whites
  • 1/4 cup granulated sugar
  • 2 tablespoons cocoa powder
  • 1 teaspoon vanilla extract
  • 1/2 cup butter, softened
  • 1 cup powdered sugar (for filling)
  • 1 teaspoon vanilla extract (for filling)
  • 1/2 cup Oreo crumbs


Instructions

  1. Preheat the oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. In a bowl, sift together almond flour, powdered sugar, and cocoa powder.
  3. In another bowl, whip egg whites until soft peaks form, then gradually add granulated sugar until stiff peaks form.
  4. Fold the dry ingredients into the whipped egg whites, then add vanilla extract.
  5. Pipe small circles onto the prepared baking sheets and let sit for 30 minutes.
  6. Bake for 15-20 minutes, then cool completely.
  7. For the filling, beat butter with powdered sugar, vanilla extract, and Oreo crumbs until smooth.
  8. Spread the filling on one macaroon and sandwich with another.
