Description

A delicious and rich dish featuring tender calf liver, sautéed in brown butter and flavored with fresh sage.


Ingredients

Scale
  • 1 pound calf liver
  • 4 tablespoons unsalted butter
  • 10 leaves fresh sage
  • Salt to taste
  • Pepper to taste


Instructions

  1. Rinse the calf liver under cold water and pat dry with paper towels.
  2. Season both sides with salt and pepper.
  3. In a large skillet, melt the butter over medium-high heat.
  4. Add the sage leaves and cook until fragrant and the butter begins to brown.
  5. Carefully add the calf liver to the skillet and cook for about 3-4 minutes on each side, or until browned and cooked through.
  6. Remove the liver from the skillet and let it rest before slicing.
  7. Drizzle the brown butter and sage over the liver slices before serving.

Notes

  • Serve with a side of mashed potatoes or a fresh salad for a complete meal.
  • Calf liver is best cooked medium to medium rare for tenderness.
