Ingredients

- 1 pound calf liver
- 4 tablespoons unsalted butter
- 10 leaves fresh sage
- Salt to taste
- Pepper to taste
Instructions
- Rinse the calf liver under cold water and pat dry with paper towels.
- Season both sides with salt and pepper.
- In a large skillet, melt the butter over medium-high heat.
- Add the sage leaves and cook until fragrant and the butter begins to brown.
- Carefully add the calf liver to the skillet and cook for about 3-4 minutes on each side, or until browned and cooked through.
- Remove the liver from the skillet and let it rest before slicing.
- Drizzle the brown butter and sage over the liver slices before serving.
Notes
- Serve with a side of mashed potatoes or a fresh salad for a complete meal.
- Calf liver is best cooked medium to medium rare for tenderness.
