Description

A rich and creamy pasta dish inspired by the flavors of Mardi Gras.


Ingredients

  • 1 pound penne pasta
  • 1 pound shrimp, peeled and deveined
  • 1 pound andouille sausage, sliced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 onion, diced
  • 1 bell pepper, diced
  • 4 cloves garlic, minced
  • 2 tablespoons Cajun seasoning
  • 1 cup green onions, chopped
  • 1 cup Parmesan cheese, grated
  • 2 tablespoons olive oil


Instructions

  1. Cook the penne pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add sausage and cook until browned; remove from skillet and set aside.
  4. Add shrimp to the skillet and cook until pink; remove and set aside.
  5. In the same skillet, add onion, bell pepper, and garlic; sauté until softened.
  6. Add chicken broth and heavy cream, stirring to combine.
  7. Mix in Cajun seasoning, then return the sausage and shrimp to the skillet.
  8. Add cooked penne pasta and Parmesan cheese, tossing to coat.
  9. Cook for an additional 2-3 minutes to heat through, then garnish with green onions before serving.

Notes

  • This dish can be made spicier by adding more Cajun seasoning.
