A refreshing and spicy salsa made with pineapple and chipotle peppers.
Ingredients

- 2 cups diced fresh pineapple
- 1 chipotle pepper in adobo sauce, minced
- 1/2 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a medium bowl, combine the diced pineapple, minced chipotle pepper, red onion, and cilantro.
- Stir in the lime juice, salt, and black pepper until well mixed.
- Taste and adjust seasoning if necessary.
- Let the salsa sit for at least 30 minutes to allow flavors to meld.
- Serve with tortilla chips or as a topping for grilled meats.
Notes
- This salsa pairs well with tacos, fish, and grilled chicken.
- For extra spice, add more chipotle peppers or some jalapeño.
