- 1 cup all-purpose flour
- 2 large eggs
- 1 1/2 cups milk
- 2 tablespoons sugar
- 1/4 teaspoon salt
- 2 tablespoons melted butter
- 1 cup diced pineapple
- 1 cup diced mango
- 1/2 cup shredded coconut
- 1 tablespoon lime juice
- 1/4 cup whipped cream (optional)
Instructions
- In a bowl, whisk together the flour, eggs, milk, sugar, salt, and melted butter until smooth.
- Heat a non-stick skillet over medium heat and pour in batter to form crepes, cooking until golden brown on each side.
- In another bowl, combine pineapple, mango, coconut, and lime juice.
- Spoon the tropical fruit mixture onto each crepe and roll them up.
- Serve warm, topped with whipped cream if desired.
Notes
- Crepes can be made in advance and stored in the refrigerator.
