Description

A tropical dessert featuring sweet crepes filled with fresh pineapple, mango, and coconut.


Ingredients

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 1/2 cups milk
  • 2 tablespoons sugar
  • 1/4 teaspoon salt
  • 2 tablespoons melted butter
  • 1 cup diced pineapple
  • 1 cup diced mango
  • 1/2 cup shredded coconut
  • 1 tablespoon lime juice
  • 1/4 cup whipped cream (optional)


Instructions

  1. In a bowl, whisk together the flour, eggs, milk, sugar, salt, and melted butter until smooth.
  2. Heat a non-stick skillet over medium heat and pour in batter to form crepes, cooking until golden brown on each side.
  3. In another bowl, combine pineapple, mango, coconut, and lime juice.
  4. Spoon the tropical fruit mixture onto each crepe and roll them up.
  5. Serve warm, topped with whipped cream if desired.

Notes

  • Crepes can be made in advance and stored in the refrigerator.
