Description

Delicious and tropical crepes filled with sweet pineapple, mango, and creamy coconut for a delightful breakfast or dessert.


Ingredients

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 1/2 cups coconut milk
  • 2 tablespoons sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup diced pineapple
  • 1 cup diced mango
  • 1/2 cup shredded coconut


Instructions

  1. In a bowl, whisk together flour, eggs, coconut milk, sugar, and vanilla extract until smooth.
  2. Heat a non-stick skillet over medium heat. Pour in a ladleful of batter, swirling to coat the bottom.
  3. Cook for 2-3 minutes until edges lift, then flip and cook for another minute.
  4. Repeat with remaining batter, stacking crepes on a plate.
  5. In a separate bowl, mix diced pineapple, mango, and shredded coconut.
  6. Fill each crepe with the fruit mixture, fold, and serve.

Notes

  • These crepes can be made ahead and stored in the refrigerator.
  • Serve with whipped cream or a drizzle of honey for extra sweetness.
