- 1 cup all-purpose flour
- 2 large eggs
- 1 1/2 cups coconut milk
- 2 tablespoons sugar
- 1/2 teaspoon vanilla extract
- 1 cup diced pineapple
- 1 cup diced mango
- 1/2 cup shredded coconut
Instructions
- In a bowl, whisk together flour, eggs, coconut milk, sugar, and vanilla extract until smooth.
- Heat a non-stick skillet over medium heat. Pour in a ladleful of batter, swirling to coat the bottom.
- Cook for 2-3 minutes until edges lift, then flip and cook for another minute.
- Repeat with remaining batter, stacking crepes on a plate.
- In a separate bowl, mix diced pineapple, mango, and shredded coconut.
- Fill each crepe with the fruit mixture, fold, and serve.
Notes
- These crepes can be made ahead and stored in the refrigerator.
- Serve with whipped cream or a drizzle of honey for extra sweetness.
