Delicious croissants filled with a rich pistachio paste, perfect for breakfast or a sweet treat.
Ingredients

- 1 cup shelled unsalted pistachios
- 1/4 cup powdered sugar
- 1 tablespoon almond extract
- 1 package puff pastry, thawed
- 1 egg, beaten (for egg wash)
- 1 tablespoon water (for egg wash)
Instructions
- Preheat the oven to 375°F (190°C).
- In a food processor, blend the pistachios and powdered sugar until fine.
- Add almond extract and mix to form a paste.
- Roll out the puff pastry and cut into triangles.
- Place a spoonful of pistachio paste at the base of each triangle.
- Roll the pastry from the base to the tip to form a croissant shape.
- Place on a baking sheet lined with parchment paper.
- Mix the beaten egg with water and brush over each croissant.
- Bake for 20-25 minutes or until golden brown.
- Allow to cool slightly before serving.
Notes
- For a richer flavor, toast the pistachios before blending.
- Serve warm for the best taste.
