Description

Deliciously soft and chewy sugar cookie bars infused with pistachio pudding, topped with a rich frosting.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 package (3.4 oz) pistachio pudding mix
  • 1 cup chopped pistachios


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until fluffy.
  3. Add in the eggs and vanilla extract, mixing until combined.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and pistachio pudding mix.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  6. Fold in the chopped pistachios.
  7. Spread the dough evenly into a greased 9×13 inch baking pan.
  8. Bake for 25-30 minutes or until the edges are golden and a toothpick comes out clean.
  9. Let cool before frosting.

Notes

  • For a richer flavor, add extra chopped pistachios on top of the frosting.
  • Store in an airtight container to keep them fresh.
