Deliciously soft and chewy sugar cookie bars infused with pistachio pudding, topped with a rich frosting.

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 package (3.4 oz) pistachio pudding mix
- 1 cup chopped pistachios
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until fluffy.
- Add in the eggs and vanilla extract, mixing until combined.
- In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and pistachio pudding mix.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- Fold in the chopped pistachios.
- Spread the dough evenly into a greased 9×13 inch baking pan.
- Bake for 25-30 minutes or until the edges are golden and a toothpick comes out clean.
- Let cool before frosting.
Notes
- For a richer flavor, add extra chopped pistachios on top of the frosting.
- Store in an airtight container to keep them fresh.
