- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 1 cup sugar
- 4 large eggs
- 3 packages (8 oz each) cream cheese, softened
- 1 tsp vanilla extract
- ÂĽ cup cocoa powder
- ½ cup heavy cream
- 2 cups mint chocolate chips
- ½ cup green food coloring
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine graham cracker crumbs and melted butter; press into the bottom of a springform pan.
- In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition.
- Divide the mixture into two bowls. In one bowl, mix in cocoa powder and heavy cream. In the other, mix in green food coloring.
- Pour dollops of each mixture into the crust and use a knife to create a swirl effect.
- Bake for 45-50 minutes or until set. Allow to cool before refrigerating.
- Chill for at least 4 hours or overnight before serving.

- For a festive twist, top with whipped cream and chocolate shavings.
- Make sure to soften cream cheese for a smoother texture.
