- 2 pounds pork belly
- 1 tablespoon salt
- 1 tablespoon black pepper
- 1 tablespoon paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 cup barbecue sauce
- 1/4 cup honey
- 1/4 cup apple cider vinegar
Instructions
- Preheat the smoker to 225°F.
- Cut the pork belly into 1-inch cubes and season with salt, pepper, paprika, garlic powder, and onion powder.
- Place pork belly cubes in the smoker and smoke for 3 hours.
- In a bowl, mix together the barbecue sauce, honey, and apple cider vinegar.
- Coat the smoked pork belly with the glaze mixture and return to the smoker.
- Continue to smoke for an additional 1-2 hours, until caramelized.
- Remove from the smoker and let rest before serving.
Notes
- For a spicier glaze, add hot sauce to the mixture.
- Best served with coleslaw or pickles.
