Description
A rich and flavorful broth made from pork trotters, reduced to a concentrated glacé.
Ingredients

- 4 pork trotters
- 2 onions, quartered
- 3 carrots, chopped
- 2 celery stalks, chopped
- 6 garlic cloves, smashed
- 1 bouquet garni
- 12 cups water
Instructions
- Place pork trotters in a large pot and cover with water.
- Add onions, carrots, celery, garlic, and bouquet garni.
- Bring to a boil, then reduce heat and simmer for about 12 hours.
- Strain broth, discarding solids.
- Return broth to pot and simmer until reduced to a glacé consistency.
- Cool and store in refrigerator or freezer.
Notes
- This broth is great for soups and sauces.
- Feel free to adjust the vegetables to your taste.
- For a clearer broth, skim off any foam that forms during cooking.
