Description

A rich and flavorful broth made from pork trotters, reduced to a concentrated glacé.


Ingredients

Scale
  • 4 pork trotters
  • 2 onions, quartered
  • 3 carrots, chopped
  • 2 celery stalks, chopped
  • 6 garlic cloves, smashed
  • 1 bouquet garni
  • 12 cups water


Instructions

  1. Place pork trotters in a large pot and cover with water.
  2. Add onions, carrots, celery, garlic, and bouquet garni.
  3. Bring to a boil, then reduce heat and simmer for about 12 hours.
  4. Strain broth, discarding solids.
  5. Return broth to pot and simmer until reduced to a glacé consistency.
  6. Cool and store in refrigerator or freezer.

  • For a clearer broth, skim off any foam that forms during cooking.
