- 1 pound Portuguese sausage
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 stalks celery, diced
- 1 can (15 ounces) kidney beans, drained and rinsed
- 6 cups chicken broth
- 1 can (14.5 ounces) diced tomatoes
- 1 teaspoon thyme
- 1 teaspoon smoked paprika
- 2 cups kale, chopped
- Salt and pepper to taste
Instructions
- In a large pot, brown the Portuguese sausage over medium heat. Remove and set aside.
- Add onion, garlic, carrots, and celery to the pot; sauté until softened.
- Return the sausage to the pot.
- Add kidney beans, chicken broth, diced tomatoes, thyme, and smoked paprika; bring to a boil.
- Reduce heat and simmer for 30 minutes.
- Stir in kale and cook for an additional 10 minutes.
- Season with salt and pepper to taste before serving.
