Description

This hearty Portuguese Bean Soup is a comforting blend of beans, vegetables, and smoky sausage that embodies the flavors of Portuguese cuisine.


Ingredients

  • 1 pound Portuguese sausage
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 6 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon thyme
  • 1 teaspoon smoked paprika
  • 2 cups kale, chopped
  • Salt and pepper to taste


Instructions

  1. In a large pot, brown the Portuguese sausage over medium heat. Remove and set aside.
  2. Add onion, garlic, carrots, and celery to the pot; sauté until softened.
  3. Return the sausage to the pot.
  4. Add kidney beans, chicken broth, diced tomatoes, thyme, and smoked paprika; bring to a boil.
  5. Reduce heat and simmer for 30 minutes.
  6. Stir in kale and cook for an additional 10 minutes.
  7. Season with salt and pepper to taste before serving.
