- 1 cup shredded coconut
- 1 cup sugar
- 1 cup all-purpose flour
- 4 eggs
- 1/2 cup milk
- 1/4 cup butter, melted
- 1 teaspoon vanilla extract
- 1 tablespoon baking powder
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix together the shredded coconut, sugar, and flour.
- In another bowl, whisk the eggs, milk, melted butter, and vanilla extract.
- Combine the wet and dry ingredients, then add baking powder and mix well.
- Pour the mixture into a greased baking dish.
- Bake for 25-30 minutes or until a toothpick inserted comes out clean.
- Allow to cool before serving.
Notes
- For best results, use fresh shredded coconut.
- Can be served warm or at room temperature.
