Description

Delicious Portuguese Coconut Cakes that are soft, moist, and full of coconut flavor.


Ingredients

  • 1 cup shredded coconut
  • 1 cup sugar
  • 1 cup all-purpose flour
  • 4 eggs
  • 1/2 cup milk
  • 1/4 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1 tablespoon baking powder


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix together the shredded coconut, sugar, and flour.
  3. In another bowl, whisk the eggs, milk, melted butter, and vanilla extract.
  4. Combine the wet and dry ingredients, then add baking powder and mix well.
  5. Pour the mixture into a greased baking dish.
  6. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  7. Allow to cool before serving.
