Description

A savory dish featuring fresh pumpkin leaves cooked with a creamy peanut butter sauce, perfect as a side or main course.

Ingredients

Scale
  • 2 cups fresh pumpkin leaves, thoroughly rinsed and chopped
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, crushed
  • 1 teaspoon freshly grated ginger
  • 1/4 teaspoon chili flakes (adjust based on spice preference)
  • 1/4 cup smooth peanut butter
  • 1/2 cup vegetable stock or water
  • 1 tablespoon tamari or soy sauce
  • 1 tablespoon fresh lime juice
  • Salt, to taste

Instructions

  1. Heat olive oil in a spacious skillet over medium heat.
  2. Add the diced onion and sauté until soft and translucent, about 3-4 minutes.
  3. Incorporate the crushed garlic, grated ginger, and chili flakes, stirring for an additional 1-2 minutes until aromatic.
  4. Toss in the chopped pumpkin leaves, mixing thoroughly with the onion blend.
  5. Cook the leaves for about 5 minutes, stirring occasionally until tender and wilted.
  6. In a separate bowl, whisk together the peanut butter, vegetable stock (or water), tamari (or soy sauce), and lime juice until creamy and well combined.
  7. Pour the peanut butter sauce over the pumpkin leaves in the skillet, ensuring even coating.
  8. Lower the heat and let it simmer gently for another 5 minutes to harmonize the flavors.
  9. Adjust seasoning with salt to taste.

Notes
