Ingredients

  • 2 pounds beef tenderloin
  • 8 ounces mushrooms, chopped
  • 1 cup breadcrumbs
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1/2 cup parmesan cheese, grated
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon thyme
  • 1/4 teaspoon red pepper flakes


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Sauté onion and garlic until translucent.
  3. Add mushrooms and cook until they release their moisture.
  4. Remove from heat and stir in breadcrumbs, parsley, parmesan, and seasonings.
  5. Cut a pocket in the beef tenderloin and fill it with the stuffing mixture.
  6. Secure with kitchen twine and season with salt and pepper.
  7. Roast in the preheated oven for about 30-35 minutes or until the internal temperature reaches 145°F (63°C).
  8. Let rest for 10 minutes before slicing.
