- 8 ounces mushrooms, chopped
- 1 cup breadcrumbs
- 1 onion, diced
- 3 cloves garlic, minced
- 1/2 cup parmesan cheese, grated
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon thyme
- 1/4 teaspoon red pepper flakes
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Sauté onion and garlic until translucent.
- Add mushrooms and cook until they release their moisture.
- Remove from heat and stir in breadcrumbs, parsley, parmesan, and seasonings.
- Cut a pocket in the beef tenderloin and fill it with the stuffing mixture.
- Secure with kitchen twine and season with salt and pepper.
- Roast in the preheated oven for about 30-35 minutes or until the internal temperature reaches 145°F (63°C).
- Let rest for 10 minutes before slicing.
