Description

Delicious raspberry lamingtons filled with jam and coated in coconut.


Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 cup raspberry jam
  • 1 cup shredded coconut


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease and line a baking pan.
  3. In a bowl, combine flour, baking powder, and salt.
  4. In another bowl, cream together butter and sugar.
  5. Add eggs one at a time, then stir in vanilla.
  6. Gradually mix in the dry ingredients and milk.
  7. Pour the batter into the prepared pan.
  8. Bake for 25-30 minutes or until golden and a toothpick comes out clean.
  9. Allow to cool, then cut into squares.
  10. Spread raspberry jam on top of each square and dip in shredded coconut to coat.

Notes

  • Make sure the cake is completely cooled before frosting.
  • Use fresh raspberries for decoration if desired.
