Ingredients

- 1 1/2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 tablespoon granulated sugar
- 1/2 cup unsalted butter, chilled and cubed
- 4-6 tablespoons ice water
- 2 cups fresh raspberries
- 1 tablespoon lemon juice
- 1/4 cup honey or sugar, adjust as needed
- 1 teaspoon rose extract
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix flour, salt, and sugar. Add butter and mix until crumbly.
- Gradually add ice water until dough comes together. Form into a disk and refrigerate for 30 minutes.
- Roll out the dough on a floured surface. Transfer to a baking sheet.
- In a separate bowl, mix raspberries, lemon juice, honey, and rose extract.
- Spread the raspberry mixture onto the dough, leaving a border.
- Fold the edges of the dough over the filling.
- Bake for 30-35 minutes or until golden brown.
- Cool slightly before serving.
Notes
- Serve warm with whipped cream for an extra treat.
- Can be made ahead of time and reheated in the oven.
