- 1 cup chia seeds
- 4 cups coconut milk
- 1/2 cup honey or maple syrup
- 1/4 cup lime juice
- zest of 2 limes
- 1 cup shredded coconut
- 1/2 cup almond slices (for topping)
Instructions
- In a large bowl, mix chia seeds, coconut milk, honey or maple syrup, lime juice, and lime zest.
- Stir well and let sit for about 10 minutes.
- Stir again to prevent clumping and refrigerate for at least 4 hours or overnight until thickened.
- Line a baking dish with parchment paper and pour the chia mixture into the dish.
- Spread evenly and top with shredded coconut and almond slices.
- Freeze for about 2 hours until firm.
- Cut into bars and serve chilled.
