Description

Enjoy a delicious and healthy dessert with our refreshing no-bake chia pudding bars that are infused with zesty coconut and lime flavors.


Ingredients

  • 1 cup chia seeds
  • 4 cups coconut milk
  • 1/2 cup honey or maple syrup
  • 1/4 cup lime juice
  • zest of 2 limes
  • 1 cup shredded coconut
  • 1/2 cup almond slices (for topping)


Instructions

  1. In a large bowl, mix chia seeds, coconut milk, honey or maple syrup, lime juice, and lime zest.
  2. Stir well and let sit for about 10 minutes.
  3. Stir again to prevent clumping and refrigerate for at least 4 hours or overnight until thickened.
  4. Line a baking dish with parchment paper and pour the chia mixture into the dish.
  5. Spread evenly and top with shredded coconut and almond slices.
  6. Freeze for about 2 hours until firm.
  7. Cut into bars and serve chilled.
