Description

A refreshing dessert featuring the tangy taste of rhubarb combined with the sweetness of oranges.


Ingredients

  • 2 cups rhubarb, chopped
  • 1 cup sugar
  • 1 cup orange juice
  • 1 tablespoon orange zest
  • 1/4 cup cornstarch
  • 1/4 cup water
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 pie crust


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a saucepan, combine rhubarb, sugar, and orange juice. Cook over medium heat until rhubarb softens.
  3. Mix cornstarch with water and add to rhubarb mixture. Stir until thickened.
  4. Remove from heat and stir in salt and vanilla extract.
  5. Pour mixture into the pie crust.
  6. Bake for 30-35 minutes or until crust is golden brown.
  7. Allow to cool before serving.

Notes

  • Serve with whipped cream for added flavor.
