Ingredients

- 2 cups rhubarb, chopped
- 1 cup sugar
- 1 cup orange juice
- 1 tablespoon orange zest
- 1/4 cup cornstarch
- 1/4 cup water
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 pie crust
Instructions
- Preheat oven to 350°F (175°C).
- In a saucepan, combine rhubarb, sugar, and orange juice. Cook over medium heat until rhubarb softens.
- Mix cornstarch with water and add to rhubarb mixture. Stir until thickened.
- Remove from heat and stir in salt and vanilla extract.
- Pour mixture into the pie crust.
- Bake for 30-35 minutes or until crust is golden brown.
- Allow to cool before serving.
Notes
- Serve with whipped cream for added flavor.
- Store leftovers in the refrigerator.
