Description

This traditional Scottish Black Bun Cake is rich in spices and fruit, perfect for special occasions.


Ingredients

  • 1 cup dark brown sugar
  • 1 cup unsalted butter
  • 4 cups all-purpose flour
  • 1 teaspoon ground cinnamon

  • 1 teaspoon baking powder
  • 1/4 teaspoon ground cloves
  • 1/2 cup whiskey
  • 5 large eggs
  • 1/4 cup milk


Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix the dried fruit with whiskey and let it soak for a few hours.
  3. Cream the butter and brown sugar together until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Add the soaked fruit and mix to combine.
  6. Sift the flour, spices, and baking powder, then fold into the mixture.
  7. Add milk to achieve the desired consistency.
  8. Pour the batter into a prepared cake tin.
  9. Bake for 1.5 to 2 hours or until a skewer comes out clean.
  10. Let cool before serving.
